ADOBONG MANOK RECIPE



Chicken Adobo Recipe

Ingredients:

    1 kilo chicken, medium cut
    4 tbsp soy sauce
    4 cloves garlic, crushed
    1 medium onion, crushed
    1/4 tbsp whole peppercorn
    3 cups water
    2 tbsp cooking oil
    2 pcs dried bay leaves (optional)
    1 tbsp vinegar
    1/2 tablespoon white sugar
    onion leaves (optional )
     fish sauce to taste



Cooking Procedure:

    1. In a large pot put the the cooking oil and apply heat.
    2. cook the, garlic, onion then add the chicken, cook until the chicken becomes light brown
    3. add the water,soy sauce, bay leaves and whole pepper corn then 
     cook for about 5 minutes.
    4. add the vinegar and continue cooking until the chicken is tender.
    5. you may add some sugar and fish sauce depending on your taste.
    6. put onion leaves on the top the serve .

BICOL EXPRESS RECIPE



BICOL EXPRESS RECIPE

Ingredients:

    1  kilo Pork (Liempo), small cut
    5  cups coconut milk
    1/2 cup shrimp paste (Bagoong Alamang )
    8  pieces long green chilis
    1  tbsp garlic, minced
    2  tablespoons ginger, minced
    1  medium onion, minced
    2  tablespoons cooking oil
    Fish sauce (Patis) to taste.


Cooking Procedure:

    1. Heat cooking oil in a pan
    2. saute garlic, ginger and onion
    3. Add the pork and cook for about 5 minutes until the pork is half cooked
    4. Add the shrimp paste and chilis
    5. Pour the coconut milk and continue to simmer for 30 minutes or until the pork is tender
    6. Add fish sauce to taste. (depending on your taste)

KARE-KARE RECIPE
















PORK KARE-KARE

Ingredients:


    1 Kilo Pork Liempo or Pata (cut in small slices) 
    1 1/2 cup ground peanuts or peanut butter
    cooked shrimp paste ( alamang )
    3 pcs eggplants(sliced)
    1 bundle of tagalog pechay 
    1 bundle of string beans ( about 2 inch slices)
    1 small banana flower bud or puso ng saging (sliced)
    1000 ml. water 
    1/2 cup atsuete (soaked in a cup of water)
    1/2 cup toasted ground rice
    2 medium onion, chopped
    2 tablespoon patis


Cooking Procedure: 


    1. Boil the water in a large pot.
    2. Put the pork & onions and simmer until the pork is tender.
    3. add the peanut butter, ground peanut and a cup of atsuete coloring  and simmer for 8 minutes
    4. Add the toasted ground rice and simmer again for 5 minutes
    5. Add the banana flower, eggplant, and string beans and cook for 5 minutes
    6. Add fish sauce or cooked shrimp paste to taste (depending on your taste)

GINATAANG ALIMANGO and FISH RECIPE


Ginataang Alimango with Bia Fish
    
Ingredients:

        1/2 kg. Alimango
        1/2 kg. Bia ( Fish )
        4 pieces long green chili, sliced 
        2 tablespoon ginger ( small cut )
        1 medium onion (chopped)
        2 teaspoons garlic ( minced )
        1 1/2 tablespoons fish sauce ( patis )
        1/2 teaspoon ground black pepper (optional )
        4 cups coconut milk
        2 tablespoons cooking oil

    Cooking Procedure:

        Heat pan and put the oil.
        Saute onion, ginger & garlic.
        Pour-in coconut milk, add ground black pepper and fish sauce.
        put the crabs, cook for 5 minutes then add the fish.
        let it cook for another 3 minutes.
        add green chilis
        after a minute turn-off heat and then serve.
